Our Story

Bakery Harlow began in 2016 when a home baker's obsession with naturally fermented bread turned into a tiny counter in a shared kitchen. Over eight years, we've grown into a neighborhood institution—still small enough to know your name, big enough to serve our entire community with the same care and attention we bring to every loaf.

We believe good bread is an act of patience and respect. Respect for the grain, for the process, for the people who eat it. Every morning, before dawn, our bakers arrive to fold dough that fermented overnight, shape proofs, and score loaves by hand. This is craft, not manufacturing.

Our sourdough starter is now over a decade old and has survived a hundred thousand folds. Our customers include young families, office workers, weekend brunchers, and people who drive 20 minutes out of their way because they understand the difference one good loaf makes in a week.

Sourdough is leavened with wild yeast and beneficial bacteria instead of commercial yeast. This creates deeper flavor, a chewy crumb, and complex tang. The long fermentation also breaks down gluten and phytic acid, making it easier to digest than standard bread.

Keep your loaf in a paper bag or linen cloth on the counter for 2–3 days. Once it hardens, slice and freeze; it toasts beautifully from frozen. Never refrigerate—it accelerates staling. A sourdough's crust softens with time; that's not spoilage, that's aging.

Our kitchen uses shared equipment, so we can't guarantee zero cross-contamination. We do offer an experimental gluten-free loaf on alternating Saturdays, baked in a separate batch. Call ahead to reserve.

We stand behind every loaf. If it doesn't meet your expectations, bring it back (even if it's half-eaten) and we'll remake it or refund you—no questions. Fresh bread is a promise.
